Olive Oil

Our olive oil begins long before it reaches the mill.

The olives are harvested by hand from Dritta, a traditional cultivar deeply rooted in the hills around Loreto Aprutino. Many of our trees are over one hundred years old, and each is harvested according to its own ripeness rather than a fixed schedule.

Within hours of picking, the olives are cold extracted at a nearby mill. We bottle this oil unfiltered and in small batches, allowing it to retain its natural texture, aromas, and vitality.

The result is an oil that reflects the grove, the season, and the many small decisions made along the way.
